Learning to taste and adjust: the skill no recipe can teach you

I need help. I've been working on french onion soup for weeks and I'm stuck.

Here's what I've tried:

  • Approach A: didn't work because of cost
  • Approach B: partially worked but mushy
  • Approach C: too expensive/time-consuming

Any suggestions? I'm open to completely different approaches.
