Is it just me or has Mustang gotten worse?
The correct approach to door gap alignment on a body-off restoration is a subject that doesn't get enough attention in online guides, which focus on the glamorous work and skip the tedious-but-critical alignment tasks.
Door gaps should be even on all sides: top, bottom, front, and rear of the door. The gap should be consistent — wide gaps and tight gaps are both wrong. The standard is 3-5mm for American cars from this era, consistent around the perimeter.
Adjustment is through the hinge bolts, which are slotted to allow positioning. Moving the hinge in the body changes the door's position relative to the opening. Moving the hinge in the door changes the door's position on the car. Fine adjustment with a body hammer and dolly is sometimes necessary after rough positioning.
